January hits and suddenly we’re all like... OK, body, we need to talk.


After the holiday food chaos (roasted meats, creamy potatoes,  fruit-filled pies and more), it’s the perfect moment to reset, without suffering through anything that tastes like lawn clippings.


And it’s not just wellness hype. Harvard Health Publishing (HHP)—the consumer health information division of Harvard Medical School (HMS)—has shared research highlighting chia seeds for their nutrient density and potential health benefits.






Translation? These little guys are loaded with fiber, protein, omega-3s, and antioxidants, and they’re famous for soaking up liquid like sponges. They can absorb up to 12x their weight, wild. That’s why they’re everywhere: smoothies, puddings, fancy wellness drinks, you name it.


They’re great for digestion, help you feel full, and just generally make you feel like you’re doing something nice for your body, without giving up flavor. Harvard Health has even talked about how chia seeds support things like heart health and digestion, which is honestly impressive for something that looks like fish food.


So yes, January is prime time to clean things up a bit, and the best way to do it is with something cold, tropical, and straight-up delicious. This pineapple chia cocktail is refreshing, juicy, lightly sweet, and feels like a mini vacation in a glass. Detox, but make it fun.


Let’s hit the kitchen.





What you’ll need is super easy to find, especially here in Costa Rica.



  • 1 pineapple, peeled and chopped (about 2 lbs).


  • 2 tbsp sugar.


  • Zest of 1 lime.


  • Juice of 2 limes.


  • ½ tsp vanilla bean paste or vanilla extract.


  • 3 tbsp chia seeds.


  • ⅔ cup water.


  • Fresh mint leaves.


  • Crushed ice.


First, toss the pineapple chunks and lime juice into a blender. Blend until smooth and juicy.



Pour the mixture through a sieve to remove the pulp. Use the back of a spoon to press out every last drop of that golden goodness. You should end up with about 3 cups of juice.







Stir in the vanilla and lime zest. Pop it in the fridge until chilled.


Add the water to a bowl, sprinkle the chia seeds on top, and stir. Whisk every 5 minutes to keep clumps away. After about 30 minutes, you’ll have that signature gel-like texture. You can leave them longer if you want.


Spoon some chia seeds into the bottom of a glass. Add crushed ice, then pour in the cold pineapple juice.


Stir to float those chia seeds around, garnish with mint, and serve immediately.


Cold, tropical, slightly fancy, and secretly healthy, this is the kind of “detox” we can actually stick with. Sip, chill, and pretend you’re on a beach somewhere.
