Easy homemade rosquillas ticas

Ticos cook a range of corn-based foods, such as the delicious sweet cornbread we made a few moons ago, the must-have tamales for your Christmas dinner, and the yummy versatile tortillas.



Another popular recipe is for corn rosquillas snacks. These are a crunchy, somewhat cracker that can be served with coffee, tea, a drink, or as a simple snack.



Because of its rounded form, the name "rosquillas" is derived from "rosca," which is a screw thread. A Tico will surely object if you use that name alone, so always call them "rosquillas."



With this easy rosquillas recipe, you can recreate this ticos traditional treat in the comfort of your own home.



So let's go to the kitchen!







The ingredients you need are:

  • 2 cups of finely ground cornmeal.


  • 2 cups of salted grated farmer’s cheese (known here as queso seco salado).


  • 1 stick of butter.


  • 1/4 tsp of salt (optional).


  • 1 cup of milk.



Mix all the ingredients until you have a smooth dough.



Set aside in the fridge overnight so the dough can hydrate.



When the dough paste is ready, make a large dough rope.



Cut into little pieces and pinch the ends together. Like making little rings.



Array on the lined baking sheets.



Bake at 350°F for 10 to 20 minutes, or until lightly browned on the bottom.



Reduce the heat to 200°F and continue to bake for 15 more minutes until lightly crispy.  



These rosquillas are best served fresh.



Cool to room temperature and then served alongside a delicious Costa Rican cup of coffee, hot chocolate, tea, or your fav drink. Enjoy!
