October is here, and you know what that means: Halloween fun, festive treats, and plenty of excuses to get creative in the kitchen! Even when you’re living in a tropical paradise, you can still bring a little fall magic to the season and celebrate with family and friends.

For those of us who grew up in the North, keeping childhood traditions alive while making new memories in a different country is something special. And honestly, what better way to do that than with a batch of homemade Halloween cookies?

These Jack-o’-lantern sandwich cookies are such a fun twist on the classic Halloween pumpkin. They have that iconic carved-pumpkin look, but there’s no need for knives, pumpkin guts, or a messy cleanup.

Just adorable orange cookies, spooky little faces, and a rich, chocolatey filling that brings everything together.

They’re perfect for baking with the kids, hanging out with friends, or adding something homemade and festive to your Halloween party.

And the best part?

You get to design the faces yourself! Go spooky, silly, goofy, or downright ridiculous. Let your imagination run wild and give every little pumpkin its own personality.

Let’s get cooking!

One bite of these buttery cookies filled with smooth chocolate ganache, and you’ll see why stopping at just one is pretty much impossible!

What you’ll need to make about 24 cookies.

  • 1 cup butter.

  • 1 cup granulated sugar.

  • 1/3 cup brown sugar.

  • 1 egg.

  • 1 teaspoon vanilla extract.

  • 3 cups all-purpose flour.

  • 1 teaspoon baking powder.

  • 1/2 teaspoon baking soda.

  • 1/2 teaspoon salt.

  • Orange food coloring.

  • Halloween pumpkin cookie cutters or 3D Jack-o’-lantern stamp molds.

  • 1/2 cup heavy cream.

  • 1 cup chocolate chips.

First, grab a large mixing bowl and beat the butter, granulated sugar, and brown sugar until everything is well combined and creamy.

Add the egg and vanilla extract, then beat again until smooth.

Next, add the flour, baking powder, baking soda, and salt.

Mix everything
together until a soft cookie dough forms.

Add the orange food coloring and mix until
the color is evenly distributed.

Keep adding a little at a time until your pumpkins reach that perfect Halloween orange.

Pop the dough into the refrigerator for about 30 minutes to an hour.
This gives it time to firm up, making it much easier to roll out and cut into shapes.

Trust me, this step is worth it! Chilled dough helps your pumpkins keep their shape while baking.

Once the dough is firm, roll it out on a lightly floured surface.

Use your pumpkin cookie cutters or Jack-o’-lantern stamp molds to cut out your shapes.

Here’s where the fun really begins:
make sure to cut faces into half of your cookies.

These will be the top pieces of your sandwich cookies
, so the chocolate filling will peek through those spooky eyes and silly grins.

Go for classic triangle eyes, goofy smiles, or whatever funny expressions you can dream up. No two pumpkins have to look alike!

Place your shaped cookies on a baking sheet and
pop them into the freezer for about 15 minutes. This extra chill helps the cookies hold their shape in the oven.

Meanwhile, preheat your oven to 350°F.

Bake the cookies for about 10–12 minutes, or until they’re set.

Keep an eye on
them so they don’t overbake.

Let them cool completely before adding the chocolate filling.

Now for the good stuff! Pour the heavy cream into a glass measuring cup and microwave it for about 30–60 seconds, until hot.

Place the chocolate chips in a small bowl and slowly pour the hot cream over them.

Let
everything sit for a couple of minutes to give the chocolate time to melt.

Then stir until the mixture is smooth, glossy, and completely combined.

That's your homemade chocolate ganache,
and it makes the perfect rich, creamy filling for these festive cookies.

Let the ganache cool until it thickens enough to spread without running everywhere.

Once the cookies and ganache have cooled,
it’s time to bring these little pumpkins to life!

Take one cookie with a cutout face and spread a spoonful of chocolate ganache over the back.
Place a solid pumpkin cookie on top, gently pressing the two together to create a sandwich.

Repeat with the remaining cookies until you have a whole batch of adorable Jack-o’-lantern treats filled with chocolatey goodness.

And just like that, your homemade Halloween cookies are ready to steal the show!

These Jack-o’-lantern cookies are almost too cute to eat. Almost!   They’re buttery, sweet, chocolatey, and packed with Halloween charm.

Whether you're celebrating in a chilly fall town or enjoying October in the tropics, they’re a delicious way to bring a little seasonal magic into your home.

Get the family involved, invite your friends over, and turn cookie decorating into a fun Halloween tradition of your own.

Mix up the expressions, get creative with the faces, and don't worry about making them perfect. The quirky ones are often the most fun!

Serve them at your Halloween party, share them with your neighbors, or keep a plate on the kitchen counter for a festive little treat.

Just a heads-up, you might want to make an extra batch.

These chocolate-filled pumpkin cookies
have a way of disappearing fast!

Have a pura vida Halloween!
