Happy 250th Birthday, America!


A quarter of a millennium, that's pretty impressive. You're getting up there, old friend, but you've never looked better.


When the 4th of July rolls around, Americans know exactly what's coming to the table: cool, colorful desserts loaded with red, white, and blue. Ice cream cakes, popsicles, berry shortcakes, you name it. They're perfect for beating the summer heat while showing a little patriotic spirit.


But if you're celebrating Independence Day here in Costa Rica, this fruit cup dessert brings something extra to the party. For many Americans, it's the kind of treat that instantly brings back memories of backyard barbecues, family reunions, fireworks, and kids running around until sunset.







Those of us lucky enough to call this beautiful Pura Vida country home can celebrate the Fourth with pride in our American roots while embracing the wonderful life we've built here.


And for families with children and grandchildren growing up in Costa Rica, it's a sweet way to share a little piece of American tradition with the next generation.

The best part? You don't have to hunt for fancy ingredients. Fresh strawberries and blueberries are easy to find in Costa Rica, making this colorful dessert as simple as it is delicious.


It's light, refreshing, beautiful to look at, and guaranteed to disappear fast.








The ingredients to make 6 dessert cups:

  • 2 cups strawberries or raspberries, hulled and sliced, plus extra for garnish.


  • 2 cups blueberries, washed, plus extra for garnish.


  • 3 tablespoons sugar.


  • 2 cups heavy whipping cream.


  • 1˝ cups powdered sugar.


  • 1˝ teaspoons vanilla extract.


  • 1 chilled medium mixing bowl.


  • 6 small dessert glasses.


  • Crushed graham crackers or sweet cookie crumbs (optional).

Place the strawberries in a large bowl, sprinkle with half of the sugar, and gently toss until evenly coated. Let them sit for 15 minutes, stir, then let them rest another 15 minutes until they're nice and juicy.


In a separate bowl, repeat the same process with the blueberries and the remaining sugar. Let them macerate while you prepare the whipped cream.


Pour the heavy whipping cream, powdered sugar, and vanilla into your chilled bowl. Beat on high speed until medium to stiff peaks form. Try not to sneak too many taste tests, but no promises.


Now comes the fun part. In each dessert glass, layer the strawberries, followed by a generous spoonful of whipped cream, then the blueberries. Finish with another fluffy layer of whipped cream.


Top each cup with a few extra berries and a sprinkle of graham cracker or cookie crumbs if you want a little crunch.


Serve chilled and watch everyone dig in. They're festive, refreshing, and almost too pretty to eat... almost.
