If there's one Costa Rican comfort food that deserves a spot on your dinner table, it's "almuercitos ticos."


The first time I tried this traditional homemade dish was during a trip to the beautiful Los Santos region, tucked away in the mountains southwest of San José.


The area gets its name from the towns that honor Catholic saints, including San Marcos, San Pablo, San Ignacio, and Santa María.


While exploring San Marcos, I stumbled into one of those places that instantly feels like home. It was a tiny family-run
"soda,"   the Costa Rican version of a neighborhood diner, called "La Casita," which means "the little house."


The restaurant was actually located inside what used to be a family home, and every item on the menu tasted as if it came straight from Grandma's kitchen.


That's where I met the star of the day: the "almuercito."


At first, I had no idea what it was. Then came the surprise. If you're from the United States, you've probably seen something very similar before.


"Almuercitos" are essentially Costa Rican-style cabbage rolls. But trust me, these aren't your average cabbage rolls.


Tender cabbage leaves are wrapped around a savory filling of seasoned beef and rice, then baked in a sweet-and-tangy tomato sauce that brings everything together.


They're hearty, comforting, and exactly the kind of meal that makes everyone gather around the table for seconds.
Sure, rolling the cabbage leaves takes a little patience, but the payoff is worth every minute.



This is the kind of dish that's made for Sunday lunches, family get-togethers, or hanging out with friends when you want something warm, satisfying, and packed with homemade flavor.


Once you try them, you'll understand why Costa Ricans have loved this recipe for generations.

To make enough "almuercitos" for six hungry friends, you'll need these easy-to-find ingredients:


For the cabbage rolls:


  • 1 pound ground beef.


  • 1 cup cooked rice.


  • 1 large egg.


  • 1 head cabbage.


  • 2 onions, diced.


  • 3 garlic cloves, minced.


  • ½ teaspoon dill weed or chopped cilantro.


  • 3 tablespoons fresh parsley, chopped.


  • Salt and pepper to taste.


  • Oil for frying. 



For the sauce


  • 1½ cups tomato juice.


  • 1 tablespoon white vinegar (apple cider vinegar works too).


  • 2 tablespoons sugar.


  • ⅓ cup tomato paste.

First, preheat your oven to 350°F.


Place the whole cabbage in a large pot and cover it with water. Bring to a boil and cook for about 15 minutes, or until the leaves become soft and flexible.


Remove the cabbage from the water, drain, and let it cool completely. Carefully separate the leaves and trim away any thick, tough veins.


Heat a skillet over medium-high heat. Add a little oil if desired.


Add the ground beef and let it brown without stirring too much. Break it into smaller pieces as it cooks until fully browned.


In a large bowl, combine the cooked beef, rice, garlic powder, onions, and egg. Mix until everything is well incorporated.


Place about ⅓ cup of the meat mixture in the center of each cabbage leaf. Fold the sides inward and roll tightly to seal the filling inside.






Arrange the cabbage rolls in a baking dish.



In a small bowl, whisk together the tomato juice, vinegar, sugar, and tomato paste until smooth.



Pour the sauce evenly over the cabbage rolls.



Bake for about 20 minutes, until everything is hot and bubbly.



Add fresh cilantro or parsley on top.



Serve your "almuercitos ticos" with creamy mashed potatoes and your favorite vegetables for a meal that can easily feed a hungry family or a table full of friends.



And since great food deserves great company, pair it with a glass of red wine or an ice-cold Costa Rican beer.



One bite, and you'll see why this humble little dish has been warming hearts and stomachs for generations.
