Pride
month is about celebrating love! It is about
recognizing LGBTQIA+ history, fighting
prejudice, and valuing diversity. This is
the month to show the world how incredible
and proud the gay community is.
This
month, Costa Rica celebrates the Pride
Parade, therefore
today's dish is inspired by the vibrant
rainbow flag, courtesy of Stephanie
Dulgarian.
Stephanie,
a wife, mother of five, and the founder of
Somewhat Simple, is passionate about
creating and inspiring. She moved from
Orange County to Phoenix, Arizona, U.S.A.,
and is currently loving life there. She

cooking, and putting together basic projects

These layered rainbow jello cups are fun to make and even more fun to eat! So, let's go to the kitchen.
The
ingredients, easy to find in Costa Rica, for
twelve guests are:
Red is
the first color of the rainbow, so we will
start with red! Follow the directions on the
box of red jelly (cherry, raspberry or
strawberry), boil hot water
on the stove, and add the packet of gelatin
powder. Stir until dissolved. I used the
“quicker method” the box refers to, using a
cup of cold water and ice to speed up the
process.
Pour a
small amount of the jello mixture into each
clear plastic cup, then refrigerate until
the liquid has set completely.
Repeat
step 1 with the orange jello (watermelon,
orange, mango or
peach). Pour a small amount on top of the
red-layer jello. Refrigerate until it has
set.
Repeat each step again until you have a jello layer of every color of the rainbow as red, yellow, green, blue and purple. It
takes less than 5 minutes to boil, mix and pour
each color, but the longest part is waiting
in between each layer for it to set, which
takes about a half hour in the fridge for
each color.
Once
all your layers are looking pretty, add some
whipped cream or vanilla yogurt and
multicolored sprinkles!
They’re
delicious "Pride" party snacks and they’ll
make the perfect addition to your
celebration!
