Nicoya gastronomic fest Saturday By the A.M. Costa Rica staff If you want to learn how to prepare traditional Costa Rican dishes, the Gastronomic Festival in Nicoya, Guanacaste, will be showing how, featuring some of the most traditional dishes in the country. "Preserving and transmitting the gastronomic heritage of the Canton of Nicoya is the goal of the traditional Nicoyanas Meals activity, with culinary contributions from multiple members of the community," said the Ministry of Culture in its statement. According to the ministry, Nicoya's folk food stands out for a wide variety of corn-based recipes, as well as other ingredients in the area, which play an important role in the economy, with food sales being a livelihood for many families. The activity called Traditional Meals Nicoyanas will be Saturday from 10 a.m. in the Nicoa Market, located in front of the courts of justice in that city. During the activity, the public will be able to taste and buy a variety of dishes, such as breads, drinks, pozol, ayaco, creole chicken with milk, chilote stew, donuts, popcorn tanela, perrerreque and papaya hash, among others. The activity is a sample of the nutritional, agricultural, environmental, and economic knowledge of all the people who participated with their recipes at fairs held in previous years. In the Nicoa Market, workshops on traditional recipe contests will be also held, " said Vera Vargas, head of the Guanacaste Office of Cultural Management. ![]() Encourage yourself to prepare an easy and typical dish of the area, such as the green papaya hash, organizers urged, giving this advice: First, peel the papaya and chop it into medium pieces. Remove the seeds and immerse the pieces in hot salt water, add a pinch of baking soda for about 10 minutes. Then add the papaya pieces to hot water. Leave for about 10 minutes boiling. Then take out the papaya pieces and let them cool. In a hot pan, add oil, the papaya and the following ingredients chopped into small pieces: onion, pepper, celery and garlic. You can add a pinch of vegetable powder known in Costa Rica as consome. After three minutes, the papaya hash is ready to eat with tortillas. The activity to promote the gastronomy of Nicoya, is organized by the Office of Cultural Management of Guanacaste, the Ministry of Culture, the Municipality of Nicoya, among other institutions. -------------------------------- What is the typical Costa Rican food that you like most?
