Plantain is a must in Tico
food. Fried or baked and stuffed with
cheese really complements this as a side
dish or appetizer. These are so
delicious... betcha can't eat just one!
So, let's go to the kitchen!
Remember all
ingredients can be easy to find at any Costa
Rican supermarket or fruit vendor. To
serve 4 people, the ingredients are:
- 2 tablespoons
of melted butter.
- 1 cup of
mozzarella cheese (American-style cheese
also works).
- 1/4 cup of
sour cream. If you like spicy food,
substitute with one or two tablespoons of
Lizano sauce (the Tico version of
Worcestershire sauce).
Preheat the oven to 400 F. Line a baking
sheet with parchment paper.
Cut off the ends of the plantains. Using the
tip of the knife, slit the peel along the
length of the plantain. Remove plantain peel
by peeling it side to side rather than
lengthwise.
Place peeled plantains on the baking sheet
and brush with butter.
Bake plantains
for 15 minutes, then flip them over and
continue to bake for another 15 minutes or
until golden brown.
Remove plantains from the oven and let cool
for a couple of minutes.
Make a lengthwise slit along the plantains
leaving at least 2” inches at each end so
they stay whole during baking.
Use a knife or spoon to push the slit apart.
Creating an opening for the cheese.
Fill each plantain with 1/2 cup of cheese.
Place them back in the oven and continue to
bake for 5 minutes or until the cheese melts
and is golden brown.
Before serving, drizzle sour cream or Lizano
sauce on top and enjoy!
